Meat consumption is on the rise in the U.S. with the average American eating 222 pounds of red meat and poultry, up 20 pounds over the past four years. While 10 percent of butcher shops have closed since 2010, many of those that have continued have not only survived, but thrived as consumers look for more personalized service and products.
